I substituted a teaspoon (and could increase it to a tablespoon) of soy sauce for all of the fish sauce and the things listed as optional are in fact optional (banana flower -- there is no way). I made the tamarind paste by hand because Mom had dried tamarind pods laying around, but there such things to be bought even in Great Falls.
